Tasting Notes: A luminous gold colour and fine, persistent mousse introduce an extraordinarily complex nose: preserved lemon and quince, smoked almond, sea-urchin brine, white pepper and toasted pastry. On the palate the texture is both creamy and brightly vibrant, layered with citrus curd, chalky minerality, subtle honeyed richness and a saline finish that carries for minutes.
