Grape: 100% Pinot Noir

Region: Nova Scotia, Canada

Tasting Notes: In the glass, a pale salmon hue with fine, lively bubbles. On the nose, delicate wild strawberry and river mint leaf, layered with doughy biscuit notes. Lively acidity lifts the mid-palate, with a creamy mousse that provides balance and elegance.

Food Pairing: Pairs well with trout tartare with crème fraîche and dill, strawberries and cream and salty cured meats.
