Hailing from the Rio Hormiga Colorada valley of Mexico, Sombra is a Mezcal (kind of like Tequila but more rustic) that is made from the Espadin Agave which is a cactus-like plant that is actually closer to a lily. The central stalk of the Agave is baked underground to convert the starch into sugars then the juice is fermented and distilled, finally it is bottled as a Silver or un-aged Mezcal. The Mezcal style is herbal, vegetal and, due to the baking of the Agave, smokey.
Nose: Smouldering bark, citrus pith followed by wood smoke and lemon juice.
Palate: Big rich smoke chased by sugar water, orange skin and sea salt.
Finish: The smoke diminishes and makes way for light tropical fruits and a little mixed spice in a lingering finish.
Overall: Lots of smokey notes with overtones of citrus, this is a really upfront mezcal.
